Preparation and Cooking
Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern and season generously with salt, black pepper, and smoked paprika. Place it in a roasting pan and cover with aluminum foil.
Roast the Pork Belly
Roast the pork belly for about 2.5 hours, until tender. Remove the foil for the last 30 minutes to allow the skin to crisp up.
Make the Spiced Caramel Glaze
In a saucepan, combine brown sugar, soy sauce, bourbon, and cherries. Cook over medium heat until the sugar has dissolved and the mixture thickens slightly.
Fry the Onions
Dredge the thinly sliced onions in flour and fry them in hot oil until golden and crispy. Drain on paper towels.
Serve
Slice the crispy pork belly and drizzle with spiced caramel glaze. Top with fried onions, pickled jalapeños, and spiced peanuts. Enjoy!
