Prepare the Ingredients

Wash the crayfish thoroughly under cold water. Cut the andouille sausage into 1-inch pieces. Peel and quarter the potatoes. Cut the corn into halves if desired, and chop the onion.

Boil the Water

In a large pot, bring 10 cups of water to a boil over high heat. You may add seasonings or a crab boil mix if desired.

Add the Ingredients

Once the water is boiling, add the potatoes and cook for about 10 minutes. Then add the andouille sausage and onion, and cook for an additional 5 minutes.

Add the Corn and Crayfish

Next, add the corn and crayfish to the pot. Cook for another 5-7 minutes, or until the crayfish are bright red and cooked through.

Serve

Drain the contents of the pot and pour them onto a large serving platter or newspaper. Serve hot with Ella hot sauce on the side.
