Prepare the Flan
Preheat your oven to 350°F (175°C). In a blender, combine the sweetened condensed milk, coconut milk, eggs, granulated sugar, and vanilla extract. Blend until smooth.
Caramelize Sugar
In a saucepan over medium heat, melt 1 cup of granulated sugar until it becomes a light amber color. Quickly pour the caramel into a round baking dish, swirling to coat the bottom.
Bake the Flan
Pour the flan mixture over the caramelized sugar in the baking dish. Place the baking dish in a larger oven-safe dish filled with water (bain-marie). Bake in the preheated oven for about 50-60 minutes or until set.
Cool and Unmold
Remove the flan from the oven and let it cool at room temperature. Once cooled, refrigerate for at least 4 hours or overnight. To serve, run a knife around the edges, invert onto a plate, and remove the baking dish.
Prepare Chantilly Cream
In a bowl, whip the heavy cream with powdered sugar until soft peaks form.
Serve
Serve slices of coconut flan topped with toasted coconut flakes, a dollop of chantilly cream, and fresh blackberries.
