Prepare the Sweet Potatoes

Peel and chop the sweet potatoes into cubes. Boil them in salted water until tender, about 15 minutes. Drain and mash with a fork. Set aside.

Prepare the Blue Corn Arepas

In a bowl, mix blue corn flour with a pinch of salt and enough water to form a dough. Shape into small patties. Heat a skillet over medium heat with olive oil, and cook the arepas for 4-5 minutes on each side until golden brown. Set aside.

Wrap the Halibut

Preheat the oven to 375°F (190°C). Take each halibut fillet and wrap it with a banana, securing it with toothpicks if necessary. Brush with olive oil and season with salt.

Bake the Halibut

Place the wrapped halibut on a baking sheet and bake for 15-20 minutes until the fish is cooked through and flakes easily.

Prepare the Coconut Broth

In a saucepan, combine the coconut milk and mole sauce. Heat over low heat until warmed through, stirring occasionally.

Fry the Plantains

Slice the plantains into thin chips. Heat oil in a frying pan and fry the plantain slices until they are golden and crispy. Drain on paper towels.

Plate the Dish

On each plate, create a base with the mashed sweet potatoes, place the banana-wrapped halibut on top, drizzle with the coconut mole broth, and garnish with pickled chilis and crispy plantain chips.
