Preheat and prepare
Preheat oven to 220°C (425°F). Line a large baking sheet with parchment paper or lightly grease it. Position a rack in the center of the oven.

Prepare sweet potatoes
Wash and peel (optional) 2 cups worth of sweet potatoes — this is about 1 large or 2 medium sweet potatoes. Cut into uniform sticks about 1/3–1/2 inch thick so they cook evenly. Rinse cut fries in cold water to remove surface starch for 1–2 minutes.

Dry and coat
Dry the fries thoroughly with clean kitchen towels or paper towels. Place the dried fries in a large bowl. Sprinkle 1 teaspoon cornstarch over them and toss until evenly coated; this helps achieve crispness. Add 2 tablespoons olive oil and toss to coat.

Season
Add 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon smoked paprika, and 1 teaspoon garlic powder to the bowl. Toss until spices are evenly distributed and each fry has a light coating.

Arrange and space
Spread the seasoned fries in a single layer on the prepared baking sheet with a little space between pieces. Avoid overcrowding — use two sheets if necessary to keep fries separated for crisping.

Bake and flip
Bake in the preheated oven for 12–15 minutes, until edges start to brown. Remove the baking sheet and use a spatula to flip the fries to expose other sides. Return to oven and bake another 8–12 minutes until fries are tender inside and crisp on the exterior. Total bake time is about 20–27 minutes depending on thickness and oven.

Broil for extra crisp (optional)
If you want extra crisp edges, switch oven to broil for the last 1–2 minutes while watching closely to prevent burning.

Remove fries from oven and immediately taste for seasoning. Adjust with a small pinch more salt if needed. Let cool on the sheet for 2–3 minutes so they firm up slightly before serving.
Serving (optional)

Transfer fries to a serving platter. Sprinkle 1 tablespoon chopped fresh parsley over the top for color and freshness. Serve with lemon wedges and 1/4 cup ketchup or your preferred dipping sauce on the side.
