Preparation of Bison Tartare

1. Prepare the Bison

Finely dice the bison tenderloin and place it in a mixing bowl. Season with smoked sea salt and black pepper.

2. Mix Ingredients

Chop the pickled ramps and add them to the bison mixture. Drizzle with olive oil and mix gently until combined.

3. Prepare Arugula

Rinse the arugula under cold water and dry it thoroughly. Set aside.

Grilling Bread

Slice the baguette into 1-inch thick slices. Spread butter on one side of each slice.
