Marinate the Lamb

In a large bowl, combine olive oil, minced garlic, ground cumin, ground coriander, paprika, salt, black pepper, lemon juice, and chopped parsley. Add the cubed lamb and mix well to coat. Cover and refrigerate for at least 2 hours, or overnight for best results.

Prepare the Grill

Preheat your grill or grill pan over medium-high heat. If using skewers, soak wooden skewers in water for 30 minutes to prevent burning.

Skewer the Lamb

Thread the marinated lamb cubes onto the skewers, leaving some space between each piece.

Grill the Lamb

Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.

Prepare the Rice

While the lamb is grilling, cook rice according to package instructions (about 1 cup of rice to 2 cups of water). Fluff with a fork when done.

Serve

Serve the grilled lamb shish with rice, fresh salads, pita bread, and side tzatziki sauce.
