Prepare the Eggplant

Slice the eggplant into 1/2 inch thick rounds. Sprinkle salt over the slices and let them sit for 30 minutes to draw out moisture.

Bread the Eggplant

Rinse the eggplant slices and pat them dry. Set up a breading station with flour, beaten eggs, and breadcrumbs. Dip each eggplant slice into flour, then into eggs, and finally coat with breadcrumbs.

Fry the Eggplant

In a large skillet, heat olive oil over medium heat. Fry the breaded eggplant slices in batches until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

Assemble the Sub

Spread a layer of marinara sauce on each sub roll. Add fried eggplant slices, a layer of marinara sauce on top, and sprinkle mozzarella and Parmesan cheese. Add fresh basil leaves and black pepper to taste.

Bake the Sub

Place the assembled subs on a baking sheet and bake in a preheated oven at 375°F (190°C) for about 10-15 minutes, or until the cheese is bubbly and golden.
