Prepare the Broth

In a saucepan, heat the vegetable broth over medium heat. Keep it warm but not boiling.

Sauté the Vegetables

In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute.

Cook the Mushrooms

Add the fresh mushrooms to the skillet and cook until they are softened, about 5-7 minutes.

Add the Rice

Stir in the Arborio rice and cook for 1-2 minutes, allowing it to toast slightly.

Incorporate the Broth

Ladle in the warm vegetable broth, one cup at a time, stirring frequently. Wait until the liquid is mostly absorbed before adding the next cup. Continue this process for about 18-20 minutes until the rice is creamy and al dente.

Finish the Risotto

Once the rice is cooked, stir in the grated Parmesan cheese, roasted pine nuts, and chopped preserved lemon. Season with salt and black pepper to taste.

Serve

Remove from heat and serve hot, garnished with additional Parmesan and pine nuts if desired.
