Prepare the Seafood

Begin by cooking the lobster and prawns. Boil the lobster in salted water for about 10-12 minutes until fully cooked. For the prawns, boil for 3-5 minutes until they turn pink. Remove and cool them under cold running water.

Prepare the Crab

If using whole Dungeness crab, steam it for about 15-20 minutes. Once cooked, let it cool before cracking it open and removing the meat. Set aside the crab meat.

Shuck the Oysters

Carefully shuck the oysters and place them on a bed of crushed ice on a serving platter.

Assemble the Tower

On a large serving dish or platter, create a tower by layering the Dungeness crab meat, lobster meat (chopped), prawns, and oysters. Place the chef's tartare sauce in a small bowl at the center for dipping.

Chill and Serve

Cover the seafood tower with plastic wrap and refrigerate for at least 30 minutes before serving. Serve chilled with lemon wedges and additional tartare sauce if desired.
