Preparation
Cook the Filling
In a large skillet over medium heat, add the diced onion and minced garlic. Sauté until the onions are translucent, about 3-5 minutes.
Add Meat and Spices
Add the ground beef or shredded chicken to the skillet. Stir in the diced bell pepper, cumin powder, chili powder, salt, and black pepper. Cook until the meat is fully cooked through, about 7-10 minutes. Remove from heat and set aside.
Assembling the Enchiladas
Prepare Tortillas
Preheat your oven to 180°C (350°F). If the corn tortillas are stiff, warm them in a dry skillet for a few seconds on each side to make them pliable.
Fill Tortillas
Take a warm tortilla, add a generous amount of the meat filling to the center, then roll it tightly. Place the rolled tortilla seam-side down in a greased baking dish.
Repeat
Repeat the filling and rolling process with the remaining tortillas and meat filling.
Baking
Add Sauce and Cheese
Once all the enchiladas are in the dish, pour the enchilada sauce evenly over the top. Sprinkle the shredded cheddar cheese over the sauce.
Bake
Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
Serving
Garnish
Remove from the oven and let cool for a few minutes. Serve hot, garnished with sour cream, chopped cilantro, and sliced jalapeños as desired.
