Prep
Trim excess fat from the goat meat and cut into 4–6 cm (1.5–2.5 in) pieces if not already cut. Pat dry with paper towels.
Peel and roughly chop the onion. Peel and smash the garlic cloves. Peel and grate or finely mince the ginger. Peel and cut carrots into 2–3 cm pieces. Chop tomatoes roughly.
If using spicy pepper, leave it whole for heat without shredding; remove seeds if you want milder heat. Measure spices and have tomato paste ready.
Browning the Meat
Season
Season the goat pieces evenly with 1½ tsp salt and the black pepper, rubbing the seasoning into the surface.
Heat a large heavy-bottomed pot or Dutch oven over medium-high heat. Add 2 tbs vegetable oil. When shimmering, add the goat in a single layer (work in batches if necessary) and brown without moving for 3–4 minutes per side until deeply browned. Browning adds flavor; don’t crowd the pan. Transfer browned pieces to a plate.
Sauté Aromatics & Build Flavor
Stir in the garlic and ginger and cook 1–2 minutes until fragrant, stirring frequently to avoid burning.
Add the tomato paste and cook, stirring, 2 minutes to remove rawness and deepen color.
Mix in ground cumin, coriander, smoked paprika, turmeric, ground cinnamon and brown sugar. Cook 1 minute to toast the spices, then add the chopped tomatoes and cook 3–4 minutes until they begin to break down.
Simmer
Return the browned goat and any accumulated juices to the pot. Add bay leaves and pour in 700 ml water or broth—enough to mostly cover the meat but not so much that it becomes soupy. Add the whole scotch bonnet or serrano if using.
Bring to a gentle boil, then reduce heat to low so the pot barely simmers. Cover partially with a lid and simmer gently for 1.5–2 hours until the goat is tender and easily pulls from the bone. Check every 30 minutes: skim any excess fat or foam and stir gently; add a splash of water if liquid reduces too much.
About 30 minutes before the end of cooking, add the carrots so they cook through but keep some texture. Adjust salt to taste (total salt will be around 2 tsp but verify).
Finish & Serve
When meat is tender, remove bay leaves and the whole pepper (if used). Stir in lime or lemon juice and chili flakes if using. If you prefer a thicker sauce, increase heat to medium-high and reduce uncovered for 5–10 minutes until desired consistency; skim excess oil if needed.
Serve warm with rice, flatbread, mashed yams, couscous or plantains. This recipe makes flavorful braised goat suitable for 4–6 servings.
