Prepare aromatics

Finely chop the onion until you have about 1/2 cup. Mince 2 garlic cloves and chop the parsley. This helps ensure even distribution through the patties.

Soak breadcrumbs

In a small bowl, combine 1/2 cup plain breadcrumbs with 2 tablespoons milk. Stir and let sit 2–3 minutes until the crumbs absorb the milk and become slightly moistened.

Combine mixture

In a large mixing bowl, add 1.25 lbs ground chicken, the soaked breadcrumbs, 1 large egg, 1 tsp Dijon mustard, 1 tsp Worcestershire sauce, chopped onion (1/2 cup), minced garlic (2 cloves), 2 tbsp chopped parsley, 1 tsp salt, 1/2 tsp black pepper, and 1/2 tsp paprika. Using clean hands or a spatula, gently mix until ingredients are evenly distributed. Avoid overworking the meat to keep patties tender.

Portion and shape

Divide the mixture into 4 equal portions (~5 oz / 140 g each). Lightly wet your hands and form each portion into a round, flattened patty about 3/4 inch thick, creating a slight dimple in the center of each patty to prevent doming while cooking.

Cooking and Serving

Preheat pan

Heat a large nonstick or cast-iron skillet over medium heat. Add 2 tablespoons vegetable oil and 1 tablespoon butter (optional) and allow the fat to heat until shimmering but not smoking.

Pan-fry patties

Place the patties in the skillet without crowding (cook in two batches if necessary). Cook for 4–5 minutes on the first side without moving them until the underside is golden-brown and releases easily. Flip and cook 4–5 minutes more on the second side, reducing heat to medium-low if the exterior browns too quickly. Internal temperature should reach 165°F (74°C).

Rest patties

Transfer cooked patties to a plate and let rest for 3–4 minutes. Resting lets juices redistribute and finishes carryover cooking to reach safe internal temperature.

Assemble and serve

Toast buns in the skillet for 30–60 seconds cut-side down if desired. Spread 1 tablespoon mayonnaise (or preferred sauce) on each bun, place a lettuce leaf and tomato slice on the bottom bun, top with a chicken patty, and close with the top bun. Serve immediately.
