For the Chicken Tacos

Cook the Chicken
In a skillet, heat olive oil over medium heat. Add diced chicken breast and cook until browned and fully cooked, about 7-10 minutes.

Add Seasoning
Sprinkle taco seasoning over the cooked chicken and stir to combine. Cook for an additional 2 minutes.

Prepare Tortillas
Warm the corn tortillas in a separate skillet over low heat or in the microwave until pliable.

Assemble Tacos
Fill each tortilla with the chicken mixture and top with shredded lettuce, diced tomato, cheese, sliced avocado, and a dollop of sour cream.
For the Cauliflower Tacos

Roast the Cauliflower
Preheat the oven to 400°F (200°C). Toss the cauliflower florets with olive oil and taco seasoning. Spread them out on a baking sheet.

Bake in the preheated oven for about 20-25 minutes, or until the cauliflower is tender and slightly crispy.
