    Prepare the Potatoes

    Preheat your oven to 200°C (400°F). Wash the marble potatoes and pat them dry. Cut them in half or quarters if they are large.

    Season and Roast

    In a bowl, toss the potatoes with olive oil, salt, and paprika. Spread them on a baking sheet in a single layer and roast for 25-30 minutes, or until golden and crispy, flipping halfway through.

    Make the Garlic Aioli

    While the potatoes are roasting, prepare the garlic aioli. Mince the garlic cloves and mix them with mayonnaise and lemon juice in a small bowl. Set aside.

    Prepare the Spicy Tomato Sauce

    In a small saucepan, heat the tomato sauce over medium heat. Stir in chili powder and cumin, and let it simmer for 10 minutes to blend the flavors.

    Serve

    Once the potatoes are done, remove them from the oven and serve hot. Drizzle the spicy tomato sauce over the potatoes and add a dollop of garlic aioli on the side. Garnish with fresh parsley.
