    Prepare the Fries

    Peel and cut the potatoes into fries. Rinse them in cold water and pat dry. Heat oil in a deep fryer or a large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy. Season with salt and paprika. Set aside.

    Make the Burger Patties

    In a large bowl, combine the ground beef, roasted Hatch green chiles, salt, and black pepper. Mix until just combined. Form into 4 equal patties, about 8 oz each.

    Cook the Bacon

    In a skillet, cook the bacon over medium heat until crispy. Remove and drain on paper towels.

    Grill the Patties

    In the same skillet or on a grill, heat a little olive oil over medium-high heat. Cook the burger patties for about 4-5 minutes on each side, or until they reach your desired doneness. During the last minute of cooking, top each patty with shredded cheddar cheese to melt.

    Assemble the Burgers

    Toast the burger buns lightly. On each bun, place a cheese-topped patty, add crumbled bacon, and any additional toppings of your choice. Top with the other half of the bun.

    Serve the burgers hot with a side of fries.
