Prepare the Beans

If using dried white beans, soak them overnight and then cook them until tender. If using canned beans, rinse and set aside.

Sauté the Aromatics

In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute.

Add the Chorizo

Add the sliced Chorizo Bilbao, Chorizo Ibérico, and Chorizo Morcilla to the pot. Cook for about 5-7 minutes, allowing the chorizos to brown and release their flavors.

Combine the Ingredients

Stir in the soaked or canned white beans. Pour in the vegetable broth, add paprika, bay leaves, salt, and black pepper.

Simmer the Soup

Bring the mixture to a boil, then reduce heat and let it simmer for about 30 minutes to allow the flavors to meld. Stir occasionally.

Finish and Serve

Remove bay leaves and adjust seasoning if necessary. Serve hot, garnished with chopped parsley.
