Dough Preparation

Make the Dough

In a large bowl, mix flour and salt. Make a well in the center and add eggs and olive oil. Gradually incorporate the flour into the eggs until a dough forms.

Knead the Dough

Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling

In a bowl, mix together ricotta cheese, cooked spinach, grated Parmesan, nutmeg, salt, and black pepper until well combined.

Roll Out the Dough

After resting, divide the dough into four pieces. Roll out each piece into thin sheets using a pasta machine or rolling pin.

Fill the Dough

Cut the rolled dough into squares and place a tablespoon of filling in the center of each square. Fold and seal the edges to form a triangle.

Cook the Donini

Bring a large pot of salted water to a boil. Add the filled triangles and cook for about 3-4 minutes until they float to the surface. Remove and drain.

Prepare the Sauce

In a skillet, melt butter over medium heat. Add minced garlic and sage leaves, cooking until fragrant. Season with salt to taste.

Toss the cooked Donini in the sage butter sauce before serving. Enjoy!
