Preheat your oven to 350°F (175°C).

Prepare the Cake Pan

In a 9-inch round cake pan, melt the unsalted butter in the oven. Once melted, sprinkle the brown sugar evenly over the melted butter.

Arrange Pineapple Slices

Place the pineapple rings on top of the brown sugar and butter mixture. Place a maraschino cherry in the center of each pineapple ring.

In a mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and a pinch of salt.

In another bowl, whisk together the milk, vanilla extract, and eggs until well combined.

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

Pour the cake batter evenly over the arranged pineapple and cherries in the cake pan.

Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted in the center of the cake comes out clean.
