Doughnut Preparation

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

Combine Wet Ingredients
In another bowl, beat the eggs and then add the milk, vanilla extract, and lemon zest. Mix until all wet ingredients are thoroughly combined.

Combine Mixtures
Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Do not overmix; a few lumps are okay.
Frying

Heat Oil
In a large, deep saucepan, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Fry Zeppole
Using a spoon or a piping bag, drop small amounts of the batter into the hot oil, frying a few at a time to avoid overcrowding. Fry until golden brown, about 2-3 minutes on each side.

Drain
Remove the zeppole from the oil using a slotted spoon and place them on paper towels to drain excess oil.
Honey Drizzle

Prepare Honey Drizzle
In a small saucepan, combine the honey and water. Heat over low heat, stirring until the mixture is smooth and well combined.

Once the zeppole have cooled slightly, drizzle the honey mixture over the warm doughnuts before serving.
