Tomato-Vodka Cream Sauce
Method
Pasta Dough
- 1
Make the Dough
In a large bowl, mix the all-purpose flour and salt. Make a well in the center and add the eggs. Gradually incorporate the flour into the eggs, using a fork until a dough forms.
- 2
Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.
Filling
- 3
Prepare the Filling
In a skillet over medium heat, add ground wild boar and cook until browned. Drain excess fat. In a bowl, combine cooked wild boar, ricotta cheese, Parmesan cheese, parsley, minced garlic, black pepper, and salt. Mix until well combined.
Ravioli Assembly
- 4
Roll the Dough
After the dough has rested, divide it into four pieces. Roll out each piece as thin as possible using a pasta machine or a rolling pin.
- 5
Fill the Ravioli
Place a tablespoon of filling about 1 inch apart on one sheet of rolled dough. Moisten the edges with water, then place a second sheet of dough on top. Press gently around the filling to seal.
- 6
Cut and Shape Ravioli
Use a ravioli cutter or a knife to cut the ravioli into squares. Ensure they are well sealed. Set aside on a floured surface.
Tomato-Vodka Cream Sauce
- 7
- 8
Add Tomatoes and Vodka
Stir in the crushed tomatoes and vodka. Bring to a boil, then reduce heat and simmer for about 10 minutes.
- 9
Finish the Sauce
Stir in the heavy cream, basil, and season with salt and black pepper to taste. Simmer for another 5 minutes.
Cooking the Ravioli
- 10
Boil the Ravioli
Bring a large pot of salted water to a boil. Add the ravioli and cook for 3-4 minutes or until they float to the surface. Remove with a slotted spoon.
- 11
Serve
Plate the ravioli and top with the tomato-vodka cream sauce. Garnish with additional basil and Parmesan cheese if desired.
