Wild Boar Preparation

Prepare the Wild Boar
Trim any excess fat from the wild boar meat and cut it into thin strips, about 1/4 inch thick. This will help the curing process.

Mix the Cure
In a large bowl, combine kosher salt, brown sugar, black pepper, paprika, garlic powder, onion powder, and Cure #1. Mix thoroughly to ensure all dry ingredients are evenly distributed.

Cure the Meat
Rub the cure mixture all over the wild boar strips, ensuring that each piece is well coated. Place the coated meat in a resealable plastic bag or a non-reactive container. Seal and refrigerate for 5-7 days, turning the meat every other day.

Add Liquid Smoke
After the curing process is complete, remove the meat from the refrigerator and rinse off the cure mixture under cold water. Pat the meat dry with paper towels. Drizzle the liquid smoke over the strips and rub it in to distribute evenly.

Prepare the Smoker
Soak the applewood chips in water for at least 30 minutes before smoking to prevent them from burning too quickly. Preheat your smoker to 200°F (93°C).

Smoke the Bacon
Place the wild boar strips on the smoker racks, ensuring they are not overlapping. Add the soaked applewood chips to the smoker box or directly onto the coals. Smoke the bacon for 2-3 hours, or until it reaches an internal temperature of 150°F (65°C).

Once smoked, remove the wild boar bacon from the smoker and allow it to cool to room temperature. Slice into desired thickness and store in the refrigerator or freeze for longer storage.
