Method

Cooking the Tortellini

    Boil Water

    In a large pot, bring 4 cups of water to a rolling boil. Add 1 tsp of salt.

    Cook Tortellini

    Once the water is boiling, add 2 cups of tortellini. Cook according to package instructions until al dente, usually about 3-5 minutes.

    Drain

    Once cooked, drain the tortellini and set aside, reserving a little pasta water for later.

Making the Sauce

    Sauté Garlic

    In the same pot, add 2 tablespoons of olive oil over medium heat. Add 3 minced garlic cloves and sauté until fragrant, about 1 minute.

    Add Tomatoes

    Add 2 cups of halved cherry tomatoes to the pot. Cook until they soften, about 3-4 minutes.

    Add Spinach

    Stir in 3 cups of fresh spinach and cook until wilted, about 2 minutes.

    Add Cream

    Pour in 1 cup of heavy cream, stirring to combine. Let simmer for 2-3 minutes.

    Season

    Add 1 tsp of salt and 1 tsp of black pepper to the sauce, stirring well.

    Combine Tortellini

    Add the cooked tortellini to the sauce, tossing to coat. If the sauce is too thick, add a splash of reserved pasta water until desired consistency is achieved.

    Add Parmesan

    Stir in 1 cup of grated Parmesan cheese until melted and well combined.

Serving

    Plate the Dish

    Serve the tortellini in bowls, garnishing each with fresh chopped basil and additional Parmesan cheese.
