Preparing the Salad

Prepare the Spinach Base
In a large salad bowl, add the fresh spinach as the base.

Add Dried Cranberries
Sprinkle the dried cranberries evenly over the spinach.

Add Mandarin Oranges
Gently add the mandarin oranges over the salad. You can use whole segments or cut them in half for easier eating.

Crumble the Goat Cheese
Crumble the herb goat cheese over the salad mixture.
Making the Vinaigrette

Caramelize the Shallots
Peel and thinly slice the shallots. In a small skillet over medium heat, add a tablespoon of olive oil. Once hot, add the sliced shallots and cook, stirring occasionally, until they are golden brown and caramelized (about 8-10 minutes). Remove from heat and let cool slightly.

Mix Vinaigrette Ingredients
In a small bowl, whisk together the caramelized shallots, remaining olive oil, balsamic vinegar, honey, salt, and black pepper until well combined.

Dress the Salad
Drizzle the vinaigrette over the salad just before serving. Toss gently to combine all ingredients evenly.
