Pasta Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs. Using a fork, beat the eggs gently, gradually incorporating the flour until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

    Roll Out the Pasta

    After resting, divide the dough into four pieces. Roll each piece out using a pasta machine or a rolling pin until thin. Cut into linguine shapes.

Shrimp and Sauce Preparation

    Sauté Aromatics

    In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped shallot, sautéing until fragrant and translucent, about 2-3 minutes.

    Cook Shrimp

    Add the shrimp to the skillet and cook for about 2-3 minutes until they turn pink and opaque. Season with salt, pepper, and red pepper flakes to taste.

    Add Tomatoes and Wine

    Stir in the halved cherry tomatoes and white wine. Allow the mixture to simmer for about 5 minutes until the tomatoes soften and the sauce reduces slightly.

    Finish the Sauce

    Remove from heat, then stir in the chopped basil and parsley. Adjust seasoning with salt and pepper as needed.

Combine and Serve

    Cook the Pasta

    In a large pot of salted boiling water, cook the linguine for about 2-3 minutes until al dente. Drain and reserve a cup of pasta water.

    Combine Pasta and Sauce

    Add the cooked pasta to the skillet with the shrimp and sauce. Toss to combine, adding reserved pasta water as needed to achieve the desired sauce consistency.

    Plate the Shrimp Herbs d'Amore and garnish with additional fresh herbs if desired. Enjoy!
