Meat Preparation

    Season the Short Ribs

    Generously season the beef short ribs with salt and black pepper on all sides.

    Sear the Short Ribs

    In a large Dutch oven or heavy pot, heat olive oil over medium-high heat. Add the short ribs and sear on all sides until browned, about 4-5 minutes per side. Remove from pot and set aside.

    Braise the Short Ribs

    In the same pot, add beef broth, Worcestershire sauce, thyme, and bay leaf. Return the short ribs to the pot, cover, and bring to a simmer. Reduce heat to low and cook for 2.5 to 3 hours, or until the meat is tender and falling off the bone.

    Sauté the Vegetables

    Once the short ribs are done, remove them from the pot and let them cool slightly. In the same pot, add the diced onion and red bell pepper. Sauté over medium heat until softened, about 5 minutes.

    Add Potatoes and Garlic

    Add the diced potatoes and minced garlic to the pot. Stir well and cook for another 5-7 minutes, until the potatoes start to soften.

    Chop the Short Ribs

    While the vegetables are cooking, shred the braised short ribs into bite-sized pieces, discarding any excess fat or bones.

    Combine Ingredients

    Add the shredded short ribs back to the pot with the vegetables. Stir to combine and cook for an additional 5-10 minutes, until everything is heated through.

Serving

    Fry the Eggs (Optional)

    While the hash is cooking, fry the eggs to your liking in a separate pan.

    Plate the Hash

    Spoon the short rib hash onto plates. Top with a fried egg and sprinkle with chopped chives, if desired.
