    Prepare the pears

    Peel the pears and cut them in half. Remove the cores using a spoon or a melon baller.

    Prepare the figs

    Chop the dried figs into small pieces.

    Chop the onion

    Slice the onion thinly.

    Prepare the basil

    Wash the fresh basil leaves and pat them dry. Tear them into small pieces.

Cooking the pears

    Poach the pears

    In a saucepan, bring 4 cups of water to a simmer. Add the sugar and a pinch of salt. Gently place the pear halves in the simmering water. Cover and poach for about 15-20 minutes or until they are tender but not falling apart. Remove the pears and let them cool.

Caramelizing the onions

    Caramelize the onions

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook for about 15-20 minutes, stirring occasionally, until the onions are golden brown and caramelized.

Assembling the dish

    On a serving plate, place the poached pear halves, top them with the caramelized onions, chopped figs, and crumbled gorgonzola cheese. Drizzle with crème fraîche and garnish with fresh basil.
