    Clean the Mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any debris. Remove the beards if present.

    Prepare the Bacon

    In a skillet over medium heat, cook the Neuske's bacon until crispy. Remove from the skillet and let it cool, then chop into small pieces.

    Chop the Aromatics

    Finely chop the shallots and garlic. Dice the tomatoes and set them aside.

Making the Cilantro Pesto

    Blend the Pesto

    In a food processor, combine the cilantro, olive oil, lemon juice, salt, and pepper. Blend until smooth and set aside.

Cooking the Mussels

    Combine Ingredients

    In a large oven-safe dish, combine the cleaned mussels, chopped bacon, diced tomatoes, shallots, and garlic. Mix well.

    Add the Pesto and Mascarpone

    Spoon the cilantro pesto over the mussel mixture and dollop the mascarpone cheese on top.

    Preheat your oven to 375°F (190°C). Place the dish in the oven and roast for about 15-20 minutes, or until the mussels have opened and are fully cooked.
