Olive Relish Preparation

Make the Olive Relish
In a mixing bowl, combine the chopped green olives, black olives, olive oil, red wine vinegar, minced garlic, dried oregano, crushed red pepper flakes, and freshly ground black pepper. Mix well until all ingredients are evenly incorporated. Set aside to allow the flavors to meld.

Assemble the Muffaletta Panini
On one slice of ciabatta bread, layer the Italian salami, capicola, mortadella, provolone cheese, fresh mozzarella cheese, and sliced tomato. Spoon a generous amount of the prepared olive relish over the top of the tomato. Top with the second slice of ciabatta bread.

Grill the Panini
Heat a panini press or a grill pan over medium heat. Place the assembled sandwich on the grill and close the press or place a heavy skillet on top of the sandwich if using a grill pan. Grill for about 4-5 minutes, or until the bread is golden brown and the cheese has melted. Carefully remove the panini from the grill and let it cool for a minute before slicing.
