Chill the Glass
Begin by chilling a wine glass or a large glass of your choice by filling it with ice water. Set it aside for a few minutes.

Prepare the Simple Syrup
If you don’t have simple syrup ready, make it by combining equal parts sugar and water in a small saucepan. Heat over low heat until the sugar dissolves completely, then let it cool.

Combine Ingredients
In a mixing glass, combine 3 oz of Lillet Blanc and 1 oz of simple syrup. Stir gently to mix.

Add Soda Water
Remove the ice water from your chilled glass and fill it with ice. Pour the Lillet mixture over the ice.

Top with Sparkling Wine
Add 2 oz of soda water to the glass, followed by 2 oz of sparkling wine. Stir gently to combine without losing the fizz.

Garnish with Mint
Take 5 fresh mint leaves, clap them between your hands to release their oils, and add them as a garnish to your drink.
