Method

Infused Tequila Preparation

  1. 1

    Prepare the Infused Tequila

In a large jar, combine the tequila with sliced jalapeno peppers and diced fresh pineapple. Seal the jar tightly and let the mixture infuse at room temperature for 24 to 48 hours, shaking occasionally. Taste periodically until the desired spiciness is reached.

House-Made Sour Preparation

  1. 2

    Make the Sour Mix

In a mixing bowl, combine fresh lime juice and simple syrup. Stir well until fully mixed. Adjust sweetness by adding more simple syrup if necessary.

Margarita Assembly

  1. 3

    Prepare the Margarita

In a cocktail shaker, combine 2 oz of the infused tequila, 1 oz of the house-made sour mix, and 1 oz of pineapple juice. Fill the shaker with ice and shake vigorously for 15 seconds.

  2. 4

    Serve the Margarita

Strain the mixture into a salt-rimmed glass filled with ice. Garnish with a lime wedge and a slice of pineapple, if desired.
