Sausage Directions

    Prepare Sausage Mixture

    In a large mixing bowl, combine ground pork, fennel seeds, paprika, garlic powder, salt, black pepper, red pepper flakes, fresh parsley, white wine, and pork fat (if using). Mix thoroughly until well combined.

    Form Sausages

    Shape the mixture into sausage links or patties, depending on your preference. Place them on a tray lined with parchment paper.

    Cook Sausages

    In a skillet over medium heat, cook the sausages until browned and cooked through, about 10-12 minutes. Remove from heat and set aside.

    Sauté Vegetables

    In a saucepan, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for an additional minute.

    Add Tomatoes and Seasonings

    Stir in crushed tomatoes, dried oregano, salt, and black pepper. Bring to a simmer and let cook for 15-20 minutes to thicken.

    Finish with Basil

    Remove from heat and stir in fresh basil. Adjust seasoning if necessary.

    Sauté Peppers and Onions

    In a skillet, heat olive oil over medium heat. Add sliced onions and bell peppers. Cook until softened, about 10 minutes.

    Add Garlic and Balsamic

    Add minced garlic, balsamic vinegar, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally.

    Prepare Garlic

    Preheat the oven to 400°F (200°C). Cut the tops off the garlic bulbs, drizzle with olive oil, and sprinkle with salt.

    Roast Garlic

    Wrap the garlic bulbs in aluminum foil and roast in the oven for 30-35 minutes, until soft and caramelized.

    Cool and Squeeze

    Allow to cool slightly, then squeeze the roasted garlic cloves out of their skins and set aside.

Assembly Directions

    Plate the Dish

    On a serving plate, spoon some of the red sauce as a base. Add the cooked sausages on top.

    Add Peperonata

    Top the sausages with the peperonata mixture.

    Garnish

    Squeeze roasted garlic over the sausages and peperonata. Sprinkle with fresh basil and grated fontina cheese before serving.
