Agrodolce Preparation

Prepare Bell Pepper Agrodolce
In a medium saucepan over medium heat, combine the sliced bell pepper, sugar, apple cider vinegar, olive oil, salt, and black pepper. Cook while stirring occasionally until the peppers are soft and caramelized, about 10-15 minutes. Remove from heat and set aside.
Garlic Aioli Preparation

Make Garlic Aioli
In a small bowl, mix mayonnaise, minced garlic, lemon juice, and salt to taste. Stir well until fully combined and smooth. Set aside.
Panini Assembly

Assemble the Panini
Spread a thin layer of butter on one side of each slice of sourdough bread. On the unbuttered side of two slices, layer the cheddar cheese, fontina cheese, goat cheese, and the prepared bell pepper agrodolce. Top with the other two slices of bread, buttered side facing out.
Grilling

Grill the Panini
Preheat a panini press or grill pan over medium heat. Place the assembled panini in the press or on the grill. If using a grill pan, press down with a spatula. Grill for about 4-5 minutes on each side, or until the bread is golden brown and the cheese has melted.
