Parmesan Crisp

Croutons

House-made Caesar Dressing

Method

Parmesan Crisp

  1. 1

    Prepare the Parmesan Crisp

Preheat the oven to 400°F (200°C). Grate the Parmesan cheese finely and place small mounds (about a tablespoon each) on a parchment-lined baking sheet. Flatten slightly to form discs.

  2. 2

    Bake the Crisps

Bake in the preheated oven for about 5-7 minutes, or until golden and crisp. Remove from the oven and let cool.

Croutons

  1. 3

    Prepare the Croutons

Preheat a skillet over medium heat. Cut the bread slices into cubes.

  2. 4

    Cook the Croutons

In a bowl, toss the bread cubes with olive oil, garlic powder, and salt until well-coated. Add to the skillet and toast, stirring frequently, until golden brown and crispy, about 5-7 minutes.

House-made Caesar Dressing

  1. 5

    Mix the Ingredients

In a mixing bowl, combine mayonnaise, minced garlic, anchovy fillets (if using), lemon juice, Dijon mustard, Worcestershire sauce, salt, and black pepper.

  2. 6

    Blend the Dressing

Whisk the ingredients together until smooth and well combined. Adjust seasoning to taste and set aside.

Salad Assembly

  1. 7

    Combine the Salad Ingredients

In a large salad bowl, combine chopped romaine lettuce, halved cherry tomatoes, croutons, and Caesar dressing. Toss gently to combine.

  2. 8

    Serve the Salad

Plate the salad and top with the Parmesan crisp. Serve immediately.
