Method
Calamari Preparation
- 1
Soak Calamari
In a medium bowl, combine the calamari rings and buttermilk. Ensure that all calamari is submerged. Cover and refrigerate for at least 1 hour to tenderize the calamari.
- 2
Prepare the Coating
In a separate large bowl, whisk together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder until well mixed.
- 3
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the flour mixture into it; if it sizzles, it's ready.
- 4
Coat the Calamari
Remove the calamari from the buttermilk, allowing excess liquid to drip off. Dredge each piece in the flour mixture, shaking off any excess flour.
- 5
Fry the Calamari
Carefully place the coated calamari rings into the hot oil in batches, being careful not to overcrowd the pot. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove the fried calamari and drain on paper towels.
Dipping Sauce Preparation
- 6
Mix the Dipping Sauce
In a small bowl, combine the mayonnaise, lemon juice, minced garlic, and hot sauce. Stir until well blended. Add the chopped parsley and mix again.
