Prepare fruit

Wash, peel or hull as needed and cut seasonal fruit into bite-sized pieces. Combine selected fruit in a bowl (about 3 cups total). Chill or set aside at room temperature while you prepare the rest of the meal.

Toast bread and bagels

Toast bagel halves and sliced bread to desired doneness in a toaster or under a broiler. While still warm, spread 1 tbsp butter on the toast and 2 tbsp cream cheese divided between bagel halves. Serve preserves in a small ramekin so guests can add if desired.

Eggs & Potatoes

Cook potatoes

Heat 1 tbsp olive oil in a large nonstick skillet over medium-high heat. Add diced potatoes in a single layer. Season with 1/2 tsp paprika, 1/4 tsp onion powder (if using) and a pinch of salt and pepper. Cook undisturbed 4–5 minutes until edges brown, then stir or toss and continue cooking 6–8 minutes more until tender and golden, stirring occasionally. Reduce heat to low and keep warm in the skillet, stirring occasionally.

Scramble eggs

In a bowl, whisk 4 large eggs with 3 tbsp milk, 1 tsp salt and 1/2 tsp black pepper until combined and slightly frothy. Melt 1 tbsp unsalted butter in a clean nonstick skillet over medium-low heat. Pour the egg mixture in and let sit 10–15 seconds, then gently stir with a spatula, folding the eggs from the edges to the center. Continue cooking slowly until soft curds form and eggs are just set but still moist, about 3–4 minutes total. Remove from heat and fold in sliced chives if using. Keep warm.

Cook bacon

For crisp bacon, place bacon strips in a cold skillet without overlapping. Turn heat to medium and cook 8–12 minutes, flipping occasionally, until crisp to your liking. Transfer to a paper towel-lined plate to drain. Alternatively bake bacon on a rimmed sheet at 400°F (205°C) for 12–18 minutes.

Cook breakfast sausages

If using links, cook sausages in a skillet over medium heat with a splash of oil, turning occasionally, about 10–12 minutes until browned and cooked through (internal temperature 160°F/71°C for pork). If using pre-cooked sausages, heat per package instructions. Keep warm with the bacon.

Plating & Finish

Divide scrambled eggs, cooked bacon and sausages, and roasted potatoes among plates. Add a portion of fresh cut seasonal fruit and serve the buttered toast and bagels with cream cheese and preserves on the side.

Garnish potatoes or eggs with chopped parsley or extra chives if desired. Serve immediately.
