Sweet Potato Fries
Prepare and cut
Preheat the oven to 425°F (220°C). Wash and peel the sweet potatoes if desired. Cut the sweet potatoes into 1/4" to 1/2" thick fries (batonnet) so pieces are as even as possible for uniform cooking. Pat the cut fries dry thoroughly with paper towels to remove surface moisture.
Coat fries
Place the dried fries in a large bowl. Sprinkle the cornstarch over the fries and toss until lightly and evenly coated—this helps create a crisper exterior. Add the olive oil and toss to coat. In a small bowl, mix smoked paprika, garlic powder, ground cumin, sea salt, black pepper, and optional cayenne; sprinkle this seasoning blend over the fries and toss until evenly seasoned.
Arrange and bake
Line two baking sheets with parchment paper and spread the seasoned fries in a single layer, leaving space between pieces so steam can escape. If needed, use both sheets and rotate halfway through baking. Bake in the preheated oven for 20 minutes, then flip the fries with a spatula and rotate the pans front-to-back. Continue baking another 10–15 minutes until edges are browned and fries are crisp to your liking (total 30–35 minutes). For extra crispness, switch to the oven's broil for 1–2 minutes at the end—watch carefully to avoid burning.
Finish and season
Remove fries from the oven and immediately sprinkle a light pinch of additional sea salt if desired. Let rest 2 minutes on the baking sheet to firm up before serving.
Chipotle Aioli
While the fries bake, prepare the aioli. In a small bowl combine the mayonnaise, finely chopped chipotle in adobo (start with 1 tsp and add more to taste), lime juice, minced garlic, honey or maple syrup, smoked paprika, sea salt, and black pepper. Whisk until smooth and well combined. Taste and adjust heat, acidity, or salt as desired. If the aioli is too thick, thin with 1/2 tsp water or additional lime juice.
Chill briefly (optional): For best flavor meld, cover and refrigerate the aioli for 10–15 minutes before serving. Serve alongside the hot sweet potato fries.
