Prepare flavor base

In a small sanitized measuring cup or container, combine the natural fruit flavoring (about 4 ml per 355 ml), the citric acid solution or 2 ml fresh lemon juice, and the optional sweetener and preservative if using. Stir until fully dissolved. If using powdered sodium citrate, dissolve the 0.25 tsp into the mixture to help buffer acidity and enhance mouthfeel.

Fill with carbonated water

If working with a canning/bottling line: ensure the 355 ml vessel is sanitized and chilled. Carefully add the pre-measured flavor base to the empty can/bottle, then fill with 355 ml chilled carbonated water, minimizing agitation to retain carbonation. If preparing a single glass: pour 355 ml chilled carbonated water into a chilled glass, then slowly stir in the prepared flavor base with a bar spoon to avoid excessive fizzing.

Adjust and balance

Taste the seltzer and adjust sweetness (add up to an extra 0.5 tsp sweetener if needed) or acidity (add a few drops more citric acid or lemon juice) to desired flavor. If you adjusted, mix gently and let any foam settle.

Serve

If serving immediately, add ice cubes if desired and garnish with a fresh citrus wedge or sprig of herb. For packaged product: cap or seal the can/bottle promptly and chill to 2–4°C before serving.

Storage notes

Keep sealed cans/bottles refrigerated and consume within the product's shelf-life. Opened seltzer is best consumed immediately to preserve carbonation.
