Method
Makrut Lime–Infused Vodka
Infuse
Place 12 oz neutral vodka in a clean jar. Lightly bruise or tear 6 makrut lime leaves to release oils and add to the vodka. Seal and infuse at room temperature for 12–24 hours, tasting after 8–12 hours until a bright lime aroma is present. Do not over-infuse to avoid bitterness.
When infusion is at the desired intensity, strain vodka through a fine mesh or coffee filter to remove leaf fragments. Bottle and store refrigerated. Measure out 2 oz per cocktail when assembling.
Clarified Green Mango Juice
Blend
Place 1 cup peeled, chopped firm green mango and 1/2 cup water in a blender with 1 tsp lime juice. Blend until very smooth, 30–45 seconds.
Optional quick clarification (egg white fining)
If using egg white: whisk 1 egg white lightly and stir into the mango purée. Let sit 10 minutes to allow proteins to bind suspended solids. Then strain the mixture through cheesecloth or a coffee filter into a clean container. Repeat filtration until the liquid is clear. Discard solids and used cloths/filters safely.
Cold-set clarification (recommended for best clarity)
For a more thorough clarification without egg: transfer blended mango purée to a clean jar and refrigerate undisturbed for 12–24 hours to let solids settle. Carefully decant the clear juice and pass through a coffee filter or very fine sieve. This yields a clarified green mango juice with bright flavor and minimal cloudiness.
Taste and adjust: clarified green mango juice should be tart green and slightly vegetal. If too tart for your preference, add up to 1/4 oz simple syrup per ounce of juice when mixing the cocktail (the cocktail recipe already allows 0.25 oz optional).
Cocktail Assembly
Chill a martini or coupe glass by filling with ice and cold water, or place in freezer for a few minutes.
In a cocktail shaker, add 2 oz makrut lime–infused vodka, 1 oz clarified green mango juice, 0.5 oz white verjus, 0.25 oz fresh lime juice, and 0.25 oz simple syrup (if you prefer a touch of sweetness).
Fill the shaker with ice (about 6 oz). Cap and shake vigorously for 12–15 seconds until the shaker is well chilled and slightly frosty.
Discard ice/water from the chilled glass. Double-strain the cocktail into the chilled martini or coupe glass through a fine strainer to remove any tiny ice shards or pulp.
Garnish with one fresh makrut lime leaf laid on the surface of the drink or lightly slapped between palms first to release aroma. Serve immediately.
