Potatoes
Prep potatoes
Wash and peel (optional) the potatoes. Cut into 1/2-inch dice for quicker cooking.
While potatoes cook, heat a large skillet over medium-high heat. Add 1.5 tablespoons olive oil and let it heat until shimmering.
Add the drained potatoes to the hot skillet in a single layer. Sprinkle paprika, garlic powder, 1/2 tsp salt, and 1/4 tsp black pepper over them. Cook, undisturbed, for 3–4 minutes to develop a crust, then stir or flip pieces and continue to cook 4–6 minutes more until golden and crisp outside and tender inside.

Choose style
Decide how you'd like the eggs: scrambled, fried (sunny-side up, over-easy, over-medium, over-hard), poached, or soft/ hard boiled. The following directions cover common cooked-to-order styles. All styles assume 3 large eggs total.
Scrambled
Crack eggs into a bowl, add a pinch of salt and pepper, and whisk until combined. Heat 1 tablespoon butter or oil in a nonstick skillet over medium-low heat. Pour eggs into the pan and let them sit 10–15 seconds, then stir gently with a spatula, folding until soft curds form but still moist, 2–3 minutes. Remove from heat just before fully set (carryover will finish them).
Fried — Sunny-side up / Over-easy / Over-medium / Over-hard
Heat 1 tablespoon butter or oil in a nonstick skillet over medium heat until shimmering. Crack eggs into the pan, spacing them slightly. For sunny-side up: cook undisturbed 2–3 minutes until whites are set but yolks still runny. For over-easy: cook 2–3 minutes then gently flip each egg and cook 15–20 seconds. For over-medium: flip and cook 30–45 seconds. For over-hard: flip and cook 1–2 minutes until yolk is fully set. Season with salt and black pepper to taste.
Poached
Bring a wide saucepan of water to a gentle simmer and add a splash of vinegar (optional). Crack each egg into a small cup and gently slip into the barely simmering water. Poach for 3 minutes for a runny yolk, 4 minutes for medium, 5 minutes for firmer. Remove with a slotted spoon and drain on paper towel. Season to taste.
Tortillas & Plating
Warm tortillas: heat a separate dry skillet or comal over medium-high heat. Warm each tortilla 20–30 seconds per side until pliable and slightly charred in spots. Brush lightly with 1/2 tablespoon butter or oil if you prefer richer flavor.
Plate assembly: divide potatoes among plates, place warmed tortillas folded or stacked to the side, and arrange the 3 eggs cooked to your preference beside or on top of the potatoes. Add lime wedges and hot sauce or salsa on the side. Garnish eggs or potatoes with a little extra chopped cilantro if desired.
