Make waffle batter (skip if using prepared or frozen waffles)

In a large bowl whisk together 1.5 cups flour, 1 tbs baking powder, 2 tbs sugar and 1/2 tsp salt. In a separate bowl whisk 1 egg, 1 cup milk and 3 tbs melted butter (or oil) until combined. Pour wet into dry and whisk until just combined; a few small lumps are fine.

Cook waffles

Preheat waffle iron according to manufacturer. Lightly oil or spray the iron. Pour batter (or place a frozen waffle) into the iron and cook until golden and crisp, about 3–5 minutes for fresh batter or as package directs for frozen. Transfer waffle to a plate and keep warm. Repeat if needed so you have one full waffle per serving.

Cut and top

Place the cooked waffle on a serving plate. Use a sharp knife to cut the waffle into 4 equal pieces. Arrange the 4 pieces slightly fanned. Scatter 3 oz mixed berries over the waffle pieces, dust with 1 tbs powdered sugar, and serve the syrup (1/4 cup) warm at the side or lightly drizzle over the waffle just before serving.

Prepare eggs to order

While waffles cook, heat a 8–10 inch nonstick skillet over medium-low heat. Add 1 tsp butter or oil and swirl. For fried eggs: crack 2 eggs into the pan, cook until whites set 2–3 minutes for sunny-side or 1–2 minutes then flip for over-easy (an additional 20–45 seconds as desired). For scrambled: whisk 2 eggs with a pinch of salt and pepper, pour into pan and stir gently until just set (1–2 minutes). For poached: bring a shallow pan of water to a gentle simmer with a splash of vinegar and poach eggs 3–4 minutes for runny yolks. Season eggs with 1/4 tsp salt and a pinch (1/8 tsp) pepper. Keep eggs warm and plate with the waffle.

Cook sausage patties

Heat a skillet over medium heat and add 1 tsp vegetable oil if patties are lean. Place 2 sausage patties in the skillet without crowding. Cook 3–5 minutes per side (depending on thickness) until nicely browned and internal temperature reaches 160°F (71°C) for pork. Remove to a paper towel-lined plate to rest briefly and keep warm with the eggs and waffles.

Assemble the plate: arrange the waffle (cut into 4), place the two sausage patties and the cooked eggs alongside. Drizzle syrup over or serve it in a small ramekin. Garnish with a mint sprig if desired. Serve immediately while hot.
