Waffle batter
Preheat and prepare
Preheat your waffle iron according to manufacturer instructions to medium-high heat. Lightly brush or spray the waffle iron with oil or nonstick spray so the waffle won't stick.
Mix dry ingredients
In a medium bowl, whisk together the all-purpose flour (1.25 cups), granulated sugar (2 tbs), baking powder (1.25 tsp), and salt (0.5 tsp) until evenly combined.
Combine wet ingredients
In a separate bowl or large measuring cup, beat the large egg, then whisk in the milk (1 cup), melted unsalted butter (3 tbs), and vanilla extract (1 tsp) until smooth.
Make the batter
Pour the wet mixture into the dry ingredients and stir gently with a spatula or whisk until just combined. A few small lumps are fine — do not overmix. The batter should be pourable; if too thick, add 1-2 tablespoons of milk.
Cook waffle
Place an appropriate amount of batter into the preheated waffle iron (amount varies by iron — typically 1/2 to 3/4 cup). Close the lid and cook until the waffle is golden brown and crisp, about 3–5 minutes depending on your iron. Do not open too early. When done, carefully remove the waffle and transfer to a plate. Keep warm in a low oven (about 200°F / 95°C) if making ahead.
Prepare toppings
While the waffle cooks, hull and slice fresh strawberries so you have about 1/2 cup sliced. Peel and slice half a banana into thin rounds (about 1/2 of a medium banana). Measure out powdered sugar (1 tsp), whipped cream (1/2 cup), and syrup (3 tbs) to serve alongside or drizzle.
Assemble and serve
Place the hot waffle on a serving plate. Arrange the sliced strawberries and banana over the top in an even layer.
Dust the fruit and waffle lightly with powdered sugar (use a small sieve or shaker for an even dusting).
Add a generous dollop of whipped cream to one side or on top of the fruit.
Serve immediately with the maple syrup on the side for pouring. If desired, drizzle a tablespoon of syrup over the fruit.
