Prepare wings
Pat the 2 lb of chicken wings dry with paper towels. Remove any excess skin or wing tips if desired and separate into drumettes and flats if not already split.
Place wings in a large bowl. Sprinkle 1 tsp kosher salt, 1/2 tsp freshly ground black pepper, 1 tbsp aluminum-free baking powder, and 1 tsp garlic powder over the wings. Toss thoroughly so each piece is evenly coated. The baking powder helps crisp the skin during cooking.
Arrange the coated wings on a wire rack set over a rimmed baking sheet (or on a parchment-lined baking sheet if you don’t have a rack). Refrigerate uncovered for at least 30 minutes and up to 4 hours to dry the skin — this yields crispier wings.
Cooking the Wings
Preheat the oven to 425°F (220°C). If you prefer to deep-fry or air-fry, adjust times accordingly (deep-fry 8–10 minutes at 375°F/190°C; air-fry 20–25 minutes at 400°F/200°C, flipping halfway).
Place the chilled wings on the wire rack over the baking sheet in a single layer, leaving space between pieces for even air circulation.
Roast in the preheated oven for 35–45 minutes, turning once halfway through. Roast until skin is deep golden-brown and crisp and an instant-read thermometer inserted into the thickest part reads 165°F (74°C). If needed, broil 1–2 minutes to further crisp, watching closely to prevent burning.
Spicy Sauce
While the wings roast, make the sauce. In a small saucepan over low heat combine 3 tbsp unsalted butter, 3/4 cup hot sauce, 1 tbsp honey, 1 tbsp rice vinegar, 1 tsp soy sauce, 1/2 tsp smoked paprika, 1/4 tsp cayenne, and 1 minced garlic clove.
Coating & Serving
When wings are done, transfer them immediately to a large clean bowl. Pour the warm spicy sauce over the wings.
Arrange the sauced wings on a serving platter. Sprinkle with 2 tbsp chopped fresh parsley or cilantro if using.
Serve hot with 1/2 cup blue cheese or ranch dressing and celery sticks. Leftover wings keep in an airtight container in the refrigerator for up to 3 days; reheat in a 375°F (190°C) oven for 10–12 minutes to re-crisp, then refresh with a little warmed sauce if desired.
