Prepare aromatics

Peel and finely dice enough white onion to measure 1/4 cup. If using jalapeño, remove seeds for less heat, then finely dice half jalapeño to yield about 1 tablespoon.

Heat a large nonstick or cast-iron skillet over medium heat. Add 1 tablespoon vegetable oil and let warm for 30 seconds.

Remove casings from 8 oz fresh Mexican chorizo and crumble the sausage into the skillet. Cook, breaking up with a spatula, for 4–6 minutes until the chorizo is mostly cooked and begins to brown.

Add the diced onion and jalapeño to the skillet with the chorizo. Continue cooking 2–3 minutes, stirring, until the onion is softened and translucent and the chorizo is fully cooked through. Reduce heat to low–medium and spread the mixture evenly across the pan to hold warm while you prepare the eggs.

Crack 2 large eggs into a medium bowl. Add 2 tablespoons whole milk, 1/4 teaspoon salt, and 1/8 teaspoon black pepper.

Whisk vigorously until the eggs are homogenous and slightly frothy—about 20–30 seconds. The milk helps produce a slightly creamier scramble.

Increase skillet heat to medium-low. Make a small well in the cooked chorizo mixture to give the eggs some direct contact with the pan, or remove half the chorizo to a bowl if you prefer separate scramble then combine.

Pour the beaten eggs into the skillet over the warmed chorizo. Let sit undisturbed for about 10–15 seconds until the edges begin to set.

Using a spatula, gently push the eggs from the edges toward the center, forming large soft curds and mixing them into the chorizo. Keep the eggs moving gently and cook until just set but still slightly glossy—about 1 to 2 minutes total. Avoid overcooking; they will firm up a little after removing from heat.

Finish & Garnish

Remove skillet from heat. Taste and adjust seasoning with a tiny pinch more salt or pepper if needed.

Spoon the huevos con chorizo onto warmed tortillas or plate as desired.

Garnish with 1 tablespoon chopped fresh cilantro and serve with a lime wedge for squeezing over the eggs. Serve immediately.
