Finely chop the yellow onion to yield about 1/4 cup. Dice the ripe tomato into small pieces, removing excess seeds and juices if desired, to yield about 1/2 cup. Remove the jalapeño stem, slice it in half lengthwise, remove seeds for milder heat (or keep some for more spice), then finely dice. Roughly chop the cilantro if using. Crack the eggs into a bowl, add the milk or water, salt and pepper, and whisk until combined and slightly frothy.

Sauté aromatics

Heat a 10-inch nonstick or well-seasoned skillet over medium heat. Add the oil and butter (if using). When the fat is hot and shimmering but not smoking, add the chopped onion. Cook, stirring occasionally, until the onion is softened and translucent, about 2–3 minutes.

Add the diced jalapeño to the skillet and cook for 30–45 seconds to 1 minute, stirring, until fragrant. Add the diced tomato and stir to combine. Cook for 1–2 minutes until the tomato softens but before it becomes completely saucy — you want the mixture to remain slightly chunky. Taste lightly and season with a pinch of salt if desired.

Reduce heat to medium-low. Give the whisked eggs a quick re-stir and pour them evenly over the softened vegetables in the skillet. Allow the eggs to set for about 10–15 seconds without stirring so curds can form.

Using a spatula, gently fold and push the eggs from the edges toward the center, creating soft curds and mixing them evenly with the onion-tomato-jalapeño mixture. Continue folding and turning the eggs until they are just cooked through but still moist and slightly creamy, about 1–2 minutes total. Avoid overcooking; the eggs will continue to cook slightly off the heat.

Remove the skillet from the heat. Stir in chopped cilantro if using. Taste and adjust salt and pepper if needed.

Serve

Divide the huevos a la Mexicana between two warm tortillas or serve over toast or with a side of refried beans. Top with crumbled queso fresco or grated cheese if desired. Serve immediately while hot.
