Prep meat and vegetables
If your fajita meat is not already cooked, slice into thin strips and sauté in a skillet over medium-high heat with 1 tsp oil, a pinch of salt, and a pinch of black pepper until cooked through (about 4–6 minutes for chicken or beef). If using pre-cooked meat, warm it gently in the pan for 1–2 minutes. If using raw bell pepper and onion, slice thin and sauté until softened, then combine with the meat.
Beat eggs
In a medium bowl whisk the 2 large eggs with 2 tablespoons whole milk, 1 teaspoon salt, and 1/4 teaspoon black pepper until uniform and slightly frothy.
Cook scrambled eggs with fajita meat
Heat a nonstick skillet over medium heat and add 1 tablespoon unsalted butter. When melted and foamy, pour in the beaten eggs. Allow eggs to set at the edges for about 10–15 seconds, then gently stir with a silicone spatula, pushing cooked portions from the edges toward the center. When eggs are about halfway cooked but still creamy (about 1–2 minutes), fold in the warm fajita meat and any sautéed peppers/onions. Continue cooking briefly until eggs are fully set but still moist, about 30–45 more seconds. Remove from heat and keep warm.
Chile Con Queso Topping
Make roux
In a small saucepan over medium-low heat melt 1 tablespoon butter. Sprinkle in 1 teaspoon all-purpose flour and whisk constantly for 30–45 seconds to cook the raw flour taste, forming a pale paste (roux).
Add milk and spices
Slowly whisk in 1/2 cup whole milk until smooth. Add 2 tablespoons diced green chiles, 1 teaspoon minced jalapeño (if using), 1/8 teaspoon ground cumin, 1/8 teaspoon smoked paprika, and 1/4 teaspoon salt. Continue whisking and cook until the mixture just begins to thicken, about 2–3 minutes over low heat.
Finish queso
Reduce heat to low. Gradually add 3/4 cup shredded Monterey Jack and 1/4 cup shredded sharp cheddar, a small handful at a time, stirring constantly until melted and smooth. If the queso is too thick, add up to 1–2 tablespoons additional milk to reach a pourable, glossy consistency. Stir in 1/2 teaspoon fresh lime juice to brighten flavor. Keep warm on the lowest heat, stirring occasionally.
Garnish & Serving
Assembly: Divide the scrambled eggs mixed with fajita meat onto a warm plate or into warmed tortillas. Spoon the hot chile con queso generously over the top.
Garnish: Sprinkle with 1 tablespoon chopped fresh cilantro and 1 tablespoon sliced green onions. Serve immediately with warm tortillas and optional hot sauce or salsa on the side.
Storage: Any leftover queso should be cooled, transferred to an airtight container, and refrigerated for up to 3 days. Reheat gently over low heat, stirring in a splash of milk to restore smoothness. Leftover eggs and meat are best consumed within 24 hours.
