Soup Base
Sear chicken
Heat 1 tablespoon oil in a large pot or Dutch oven over medium-high heat. Season the chicken lightly with 1/4 teaspoon salt and a pinch of pepper. Add chicken and sear 2–3 minutes per side until lightly browned (it will finish cooking in the broth). Remove chicken to a plate.
Simmer soup
Add the fire-roasted diced tomatoes (with juices), tomato sauce, chicken broth, ground cumin, chili powder, oregano, remaining 1 teaspoon salt, and 1/2 teaspoon black pepper to the pot. Stir to combine, scraping up any brown bits. Return the seared chicken to the pot. Bring to a gentle boil, then reduce heat to low, cover, and simmer 18–22 minutes, until the chicken is cooked through and rice (if added to the pot) — note: rice is cooked separately here.
Shred chicken and finish
Remove the chicken from the pot to a cutting board. Use two forks to shred into bite-sized pieces. Return shredded chicken to the pot. Stir in corn and black beans and simmer 5 more minutes to heat through. Add chopped cilantro and lime juice. Taste and adjust seasoning with more salt, pepper, or lime juice as needed.
Rice
While the soup simmers, cook the rice. In a small saucepan, bring 1 cup water, 1/4 teaspoon salt and 1/2 tablespoon butter or oil to a boil. Stir in 1/2 cup long-grain white rice, reduce heat to low, cover and simmer 15 minutes until water is absorbed and rice is tender. Fluff with a fork and keep warm.
Toppings
Prepare toppings: shred the Monterey Jack cheese, dice the avocado, and have pico de gallo and tortilla strips ready. If using store-bought tortilla strips, warm briefly in a 350°F (175°C) oven for 3–4 minutes if desired to refresh crispness.
Assemble and serve: Place a scoop (~1/2 cup) of cooked rice into each serving bowl (or add rice directly to the soup pot for large portions). Ladle the hot chicken tortilla soup over the rice. Top each bowl with shredded Monterey Jack cheese so it melts on contact, a handful of tortilla strips, a spoonful of pico de gallo, diced avocado, extra cilantro and a lime wedge on the side. Serve immediately.
