Prepare shredded chicken
If you don't have pre-cooked chicken, simmer 2 medium boneless, skinless chicken breasts in salted water for 12–15 minutes until cooked through. Remove, let cool slightly, then shred with two forks to yield about 2 cups.
In a medium bowl, combine the shredded chicken, 1 cup shredded cheddar, 2 oz softened cream cheese, 1/4 cup finely chopped onion, 1 tsp minced garlic, 2 tbsp chopped cilantro, 1/2 tsp ground cumin, 1/2 tsp chili powder, 3/4 tsp salt, 1/4 tsp black pepper, and 1 tbsp lime juice. Mix thoroughly until evenly combined and creamy. Taste and adjust seasoning.
Assembly & Wrapping
Lay one warm tortilla flat. Spoon about 2 to 3 tablespoons of the chicken mixture in a thin line down one side of the tortilla, leaving 1/2 inch at the edges. Spread slightly but keep it narrow so the tortilla rolls tightly. Repeat for remaining tortillas.
Roll each tortilla tightly from the filling side to form a cigar shape (flauta). Secure with a toothpick if needed. Place seam-side down on a plate while you finish rolling the rest.
Frying (or Baking) & Finishing
Frying method (recommended for crispness): In a heavy skillet or shallow Dutch oven, pour oil to a depth of about 1/2 to 1 inch (about 1.5–2 cups depending on pan). Heat over medium-high until oil reaches 350°F (175°C) or a piece of tortilla sizzles immediately when added. Fry flautas seam-side down first in batches of 3–4, turning as needed, for 2–3 minutes until golden brown and crisp. Use tongs to remove and drain on paper towels. Remove toothpicks after frying.
Baking method (lighter): Preheat oven to 425°F (220°C). Place rolled flautas seam-side down on a baking sheet lined with parchment. Lightly brush each with 1 tsp vegetable oil. Bake 12–15 minutes, turning once, until crisp and golden.
Keep finished flautas warm on a baking sheet in a 200°F (95°C) oven if making multiple batches.
Garnishes & Serving
Arrange flauta bites on a platter. Serve with sour cream, salsa or pico de gallo, sliced jalapeños, extra chopped cilantro, and lime wedges alongside for squeezing.
For a finishing touch, drizzle a little sour cream over some flautas or sprinkle extra shredded cheese and briefly return to the oven (or under the broiler for 30–45 seconds) to melt.
Serve immediately while hot and crispy. Each guest can dip into salsa or sour cream and squeeze lime as desired.
