Trim and thinly slice the red, green, and yellow bell peppers into about 1/4-inch strips. Slice the onion thinly. Clean and slice mushrooms. Halve or quarter the cherry tomatoes. Rinse and roughly chop spinach if leaves are large. Grate the cheddar if not pre-shredded.

If using leftover cooked breakfast potatoes and black beans, rewarm separately in a small pan or microwave until hot (about 2–3 minutes microwave or 4–6 minutes in a skillet over medium). Keep warm.

Vegetable Sauté

Cook the aromatics and vegetables

Heat a 10-inch nonstick or well-seasoned skillet over medium heat. Add 1 tsp olive oil. Once shimmering, add the sliced onions and bell peppers. Sauté for 3–4 minutes, stirring occasionally, until peppers have softened and onions are translucent.

Add the sliced mushrooms to the pan and continue to cook 2–3 minutes until they release moisture and begin to brown. Season the vegetables lightly with a pinch of salt and 1/8 tsp black pepper while cooking.

Stir in the chopped spinach and cherry tomatoes and cook 30–60 seconds, just until the spinach wilts and tomatoes are slightly warmed. Remove the vegetable mixture to a small bowl and set aside. Wipe the pan clean if it has browned bits that might overcook the eggs.

Omelette Cook

Beat the eggs

In a small bowl, crack the 2 eggs. Add 2 tbsp whole milk, 1 tsp salt, and 1/4 tsp black pepper. Whisk vigorously until fully combined and slightly frothy. (This yields a tender, slightly creamy omelette.)

Warm the same skillet over low–medium heat and add 1 tbsp unsalted butter. Allow butter to melt and foam but not brown; swirl to coat the pan evenly.

Pour the beaten eggs into the skillet and let them sit undisturbed for 10–15 seconds until edges begin to set. With a silicone spatula, gently pull the cooked edges toward the center, tilting the pan to allow uncooked egg to flow to the edges. Repeat until the eggs are mostly set but still slightly soft on top, about 1–2 minutes total.

Spoon the reserved sautéed vegetables evenly over one half of the omelette. Sprinkle the shredded cheddar over the vegetables so it will melt as the omelette finishes cooking. If adding beef or chicken fajita, distribute the warmed sliced meat now (3 oz).

Using the spatula, fold the empty half of the omelette over the filling to create a semi-circle. Cook 20–30 seconds more to ensure the cheese melts thoroughly and filling is heated through. Slide the omelette onto a plate.

Plating & Finish

Place the omelette on the serving plate. Arrange the warmed breakfast potatoes beside it (about 3/4 cup). Spoon the warmed black beans next to the potatoes or in a small ramekin (about 1/2 cup).

Crumble 2 tbsp queso fresco over the omelette and beans. Sprinkle chopped cilantro over the plate if using, and add hot sauce or salsa to taste.

Serve immediately while the omelette and sides are hot. Recommend offering additional condiments (extra salsa, sour cream, or sliced avocado) on the side.
