Juice the citrus

Roll limes and lemons on the counter to loosen juice. Cut limes and lemons in half and juice until you have 1 cup lime juice and 1/4 cup lemon juice. Strain through a fine-mesh sieve into a liquid measuring cup to remove pulp and seeds if you prefer a smooth drink.

Make simple syrup (if not pre-made)

Combine equal parts granulated sugar and water (use 1/2 cup sugar and 1/2 cup water to yield about 1/2 cup syrup; adjust scale to make 3/4 cup). Heat gently in a small saucepan, stirring until the sugar fully dissolves. Cool to room temperature before using. (If using pre-made, skip this step.)

Combine ingredients

In a pitcher, combine the strained lime juice (1 cup), lemon juice (1/4 cup), 3/4 cup cooled simple syrup, 1 cup cold water, and 1/4 cup orange juice (optional). Stir thoroughly to integrate. Taste and adjust: for tarter margaritas add up to 2 tablespoons more simple syrup; for brighter flavor add up to 2 tablespoons more lime juice; for a lighter drink add more cold water in 1/4 cup increments.

Chill

Refrigerate the pitcher for at least 30 minutes to let flavors meld. For immediate service, proceed and serve over ice — chilling improves balance.

Prepare the rim

Spread 2 teaspoons of coarse kosher salt or flaky sea salt in a shallow dish. Rub a lime wedge around the rim of each glass to moisten, then dip the rim into the salt, twisting to coat evenly. Tap off excess salt.

Assemble and serve

Fill each prepared glass with 1 cup of ice cubes. Pour about 1 cup (250 ml) of the chilled margarita mix into each glass (this recipe yields about 4 cups total, serving 4). Garnish each glass with a lime wheel or slice on the rim and a lime wedge on the side. Serve immediately. If you prefer slushy margaritas, blend each 1-cup portion of mix with 1 to 1 1/2 cups ice until smooth.

Storage

Keep remaining margarita mix refrigerated in a sealed container for up to 3 days. Stir before serving. Do not freeze if you used water and citrus without stabilizers unless you plan to make frozen servings.
